The Jolly Collier Hotel in Dysart is the central community hub for residents and businesses in Dysart. The town’s name originates from the Scottish town of Dysart, also a coal mining community, reflecting the region’s strong mining heritage.
In Dysart’s case, the town was established as a dormitory town for three local coal mines – Saraji in 1973, Norwich Park in 1977 and the Harrow Creek trial colliery which has since ceased operations. The largest open cut coking coal mine in Australia at Peak Downs was established nearby in 1972.
The Dysart area was first explored by German-born Ludwig Leichhardt, who arrived in Australia in 1842. In passing through the Broadsound Shire, he erected a small cairn of stones on Campbell’s Peak, approximately 14 kilometres west of where the town now stands. It was Leichhardt who first made reference to coal deposits in Central Queensland.
The area supported agricultural industries including beef, cattle and grain production, which still continue today.

ONO’s at the Jolly Collier Hotel is a family friendly relaxed Bistro. Dine inside in air conditioned comfort or Al Fresco adjacent our Lawn / Playground Area.
The Menu is prepared fresh daily featuring our speciality, the succulent quality MSA Grade Cuts of Beef through our Highlands Choice brand. The Steaks are cooked to your liking on our open grill. Add your choice of Sauce or a Seafood topper.
In addition to all of your favourites and Pub Classics on the menu, there are options to provide for all tastes plus daily Chef Creations and Specials or “Challenges”. The Kids menu is also a hit with children’s activity, ice-cream and soft drink package.
The daily Lunch Specials are popular inexpensive and provide quick and tasty meals for any time poor traveller or worker. After work choose a Share or Tapas Platter.
Chefs can cater for all individual tastes and we accept special requests, private parties, group bookings or functions..
